  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup green beans, trimmed
  • 1 cup corn kernels
  • 1 cup cooked beans (black or kidney)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in carrots, celery, and bell pepper; cook for 5 minutes.
  4. Add zucchini, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add green beans, corn, and cooked beans; simmer for an additional 10 minutes.
  7. Serve hot, garnished with fresh herbs if desired.
