- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup green beans, trimmed
- 1 cup corn kernels
- 1 cup cooked beans (black or kidney)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in carrots, celery, and bell pepper; cook for 5 minutes.
- Add zucchini, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add green beans, corn, and cooked beans; simmer for an additional 10 minutes.
- Serve hot, garnished with fresh herbs if desired.
