Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef stew meat and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the carrots, potatoes, and beef broth to the pot.
  5. Season with thyme, salt, pepper, and add the bay leaf.
  6. Bring to a boil, then reduce heat to low and cover.
  7. Let simmer for 2-3 hours, or until the meat is tender.
  8. Remove the bay leaf before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • This stew can be made a day in advance for better flavor.
  • Serve with crusty bread for a complete meal.
