Ingredients

- 2 lbs beef stew meat, cut into cubes
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef stew meat and brown on all sides.
- Stir in the onions and garlic, cooking until softened.
- Add the carrots, potatoes, and beef broth to the pot.
- Season with thyme, salt, pepper, and add the bay leaf.
- Bring to a boil, then reduce heat to low and cover.
- Let simmer for 2-3 hours, or until the meat is tender.
- Remove the bay leaf before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- This stew can be made a day in advance for better flavor.
- Serve with crusty bread for a complete meal.
