- 1 tablespoon olive oil
- 1-inch knob fresh ginger, grated
- 2 cloves garlic, smashed
- 2 celery stalks, finely sliced
- 1 zucchini, diced
- 1 small fennel bulb, chopped
- 1 teaspoon turmeric
- ½ teaspoon ground cumin
- 4 cups low-sodium vegetable broth
- Juice of ½ lemon
- Fresh parsley, to finish
- Salt and black pepper to taste
Instructions
- In a heavy-bottomed pot, warm olive oil over medium heat. Add garlic and ginger. Let them bloom for 60 seconds.
- Add celery, fennel, and zucchini. Sauté until they start to soften.
- Stir in turmeric and cumin to coat the vegetables.
- Pour in the broth. Simmer gently for 15 minutes.
- Add lemon juice, season with salt and pepper, and stir in chopped parsley.
Notes
For extra healing power, garnish with fresh parsley and a dash of cayenne if tolerated. Sip slowly and let your gut heal.
