Ingredients

  • 1 tablespoon olive oil
  • 1-inch knob fresh ginger, grated
  • 2 cloves garlic, smashed
  • 2 celery stalks, finely sliced
  • 1 zucchini, diced
  • 1 small fennel bulb, chopped
  • 1 teaspoon turmeric
  • ½ teaspoon ground cumin
  • 4 cups low-sodium vegetable broth
  • Juice of ½ lemon
  • Fresh parsley, to finish
  • Salt and black pepper to taste

Instructions

  1. In a heavy-bottomed pot, warm olive oil over medium heat. Add garlic and ginger. Let them bloom for 60 seconds.
  2. Add celery, fennel, and zucchini. Sauté until they start to soften.
  3. Stir in turmeric and cumin to coat the vegetables.
  4. Pour in the broth. Simmer gently for 15 minutes.
  5. Add lemon juice, season with salt and pepper, and stir in chopped parsley.

Notes

For extra healing power, garnish with fresh parsley and a dash of cayenne if tolerated. Sip slowly and let your gut heal.
