Description
A healthy and delicious casserole featuring zucchini and ground turkey, perfect for a spring dinner.
Ingredients

- 2 medium zucchinis, sliced
- 1 pound ground turkey
- 1 cup diced tomatoes
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add ground turkey to the skillet, cook until browned.
- Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for about 5 minutes until zucchini is slightly tender.
- Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
