Description

A refreshing and healthy salad made with spiralized zucchini, perfect for spring.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Spiralize the zucchinis into noodles using a spiralizer.
  2. In a large bowl, combine the zucchini noodles, cherry tomatoes, red onion, and basil.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Top with crumbled feta cheese before serving.
