Delicious and quick shrimp tacos filled with vibrant vegetables, made in the air fryer for a healthy twist.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 8 small tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lime wedges and cilantro for serving
Instructions
- Preheat the air fryer to 400°F (200°C).
- Combine shrimp, bell pepper, onion, olive oil, fajita seasoning, salt, and pepper in a bowl.
- Toss to coat the shrimp and vegetables well.
- Place the mixture in the air fryer basket in a single layer.
- Cook for about 8-10 minutes, shaking the basket halfway through, until shrimp are cooked through and vegetables are tender.
- Warm the tortillas in the air fryer or on a skillet.
- Fill the tortillas with the shrimp and vegetable mixture.
- Serve with lime wedges and cilantro.
Notes
Don’t overcrowd the air fryer for even cooking. Experiment with vegetables and spice levels for variety!
