Description

Delicious and quick shrimp tacos filled with vibrant vegetables, made in the air fryer for a healthy twist.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • 8 small tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lime wedges and cilantro for serving


Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Combine shrimp, bell pepper, onion, olive oil, fajita seasoning, salt, and pepper in a bowl.
  3. Toss to coat the shrimp and vegetables well.
  4. Place the mixture in the air fryer basket in a single layer.
  5. Cook for about 8-10 minutes, shaking the basket halfway through, until shrimp are cooked through and vegetables are tender.
  6. Warm the tortillas in the air fryer or on a skillet.
  7. Fill the tortillas with the shrimp and vegetable mixture.
  8. Serve with lime wedges and cilantro.

Notes

Don’t overcrowd the air fryer for even cooking. Experiment with vegetables and spice levels for variety!
