Description

A vibrant and colorful Italian appetizer featuring mozzarella, vegetables, and charcuterie on skewers.


Ingredients

Scale
  • 12 Balls mozzarella (small)
  • 12 cheese tortellini
  • 24 cherry tomatoes
  • 12 Leaves basil
  • 12 green olives (pitted)
  • 12 black olives (pitted)
  • 12 Slices salami
  • ¼ Cup extra virgin olive oil
  • 1 Tablespoon white wine vinegar
  • ½ lemon (juiced)
  • 1 Tablespoon parsley (chopped)
  • 2 Teaspoons oregano (chopped)
  • 2 Cloves garlic (minced)
  • 1 Teaspoon Dijon mustard
  • 1 Teaspoon sea salt
  • ½ Teaspoon black pepper (coarse)
  • 1 Pinch red pepper flakes


Instructions

  1. Cook tortellini according to package directions.
  2. Place into a strainer and rinse under cold water until cool.
  3. Combine Italian dressing ingredients in a mason jar and shake vigorously for 30 seconds.
  4. Add mozzarella, tortellini, and tomatoes to a bowl with a lid.
  5. Pour Italian dressing over and marinate for at least 120 minutes, preferably overnight.
  6. Assemble skewers by rotating mozzarella balls, basil leaves, tortellini, olives, meat, and tomatoes.

Notes

Allow skewers to marinate for enhanced flavors. Customize ingredients to your preference.
