- Tangzhong (from recipe above)
- 6 tablespoons unsalted butter (room temperature)
- 1/2 cup unsalted butter (room temperature)
- 2/3 cup brown sugar (packed)
- 2 teaspoons ground cinnamon
- 4 tablespoons unsalted butter (room temperature)
- 2 ounces cream cheese (room temperature)
- 1 cup powdered sugar
- 2 1/2 tablespoons heavy cream
- 2 tablespoons apple butter
Instructions
- Make the apple filling: dice the apples and place them in a bowl. Combine the apples, apple butter, granulated sugar, water, lemon juice, cinnamon, and vanilla extract; stir well.
- Prepare the mixture for thickening: mix water with cornstarch until smooth and stir into the apple filling; let sit for 30 minutes.
- In a saucepan, combine water and bread flour; whisk until smooth and cook on low until it thickens to a paste.
- Transfer the mixture to a bowl and let it cool.
- In a large bowl, mix bread flour, sugar, instant yeast, and fine sea salt.
- Pour in whole milk, heavy cream, egg, and vanilla extract; add the Tangzhong mixture.
- Mix until a dough forms, then knead until smooth.
- Add room-temperature butter to the dough and knead until incorporated.
- Cover the dough and let it rise in a warm place until double in size (about 60 minutes).
- Roll out the dough on a floured surface into a rectangle about 1/4 inch thick.
- Spread softened butter on the dough, then sprinkle brown sugar and cinnamon.
- Spread the apple filling evenly across the dough.
- Roll up the dough tightly and pinch the seams to seal.
- Cut into 12 even rolls and place in a greased baking dish.
- Cover and let them rise until nearly doubled (about 30 minutes).
- Preheat your oven to 350°F (175°C).
- Bake the rolls for 25-30 minutes or until golden brown.
- Make the glaze by beating cream cheese until smooth; add powdered sugar, heavy cream, and apple butter until combined.
- Drizzle the glaze over warm rolls before serving.
Notes
Use fresh apples for the best flavor. Allow adequate rising time for fluffy rolls. Serve warm for best experience.
