- 1 cup panko breadcrumbs

Instructions
- Preheat the oven to 425°F (220°C).
- Slice the avocados into wedges.
- In a bowl, season the flour with salt and pepper.
- In another bowl, beat the eggs.
- In a third bowl, place the panko breadcrumbs.
- Dredge each avocado slice in flour, dip in the beaten eggs, and then coat with panko breadcrumbs.
- Arrange the coated avocado fries on a baking sheet and spray with cooking spray or drizzle with olive oil.
- Bake for 15-20 minutes until golden and crispy.
- Serve warm as a snack or side dish.
