- 1 ripe medium avocado
- Dash of Tabasco sauce
- 1 teaspoon lemon juice (or more to taste)
- Pinch of salt
- 1 1/2 medium English cucumbers, cut into 1 1/2 inch slices
- 1-2 sundried tomatoes or roasted red peppers, chopped finely
- Parsley for garnish
Instructions
- Mash In a medium-size bowl, use a fork to mash together the ripe avocado and fresh goat cheese until a smooth, creamy mixture forms.
- Add a dash of Tabasco sauce, the lemon juice, and a pinch of salt.
- Mix well to combine all flavors. Taste and adjust seasoning with more lemon juice or salt if needed to suit your preference.
- Wash the English cucumbers and slice them into approximately 15 pieces, each about 1 ½ inches thick to provide a stable base for the topping.
- Place Using a spoon or piping bag, carefully place the avocado and goat cheese mixture onto each cucumber slice, creating an even layer.
- Top each with a small piece of finely chopped sundried tomato or roasted red pepper for a burst of color and flavor.
- Garnish Finish by adding a sprig or small leaves of fresh parsley atop each appetizer for a fresh, vibrant garnish.
- Serve immediately to enjoy the crispness of the cucumber and the creamy topping at their best.
