- 1 medium spaghetti squash
- 6 slices of bacon, chopped
- 1 cup shredded cheese (cheddar or your choice)
- 6 large eggs
- 1 cup milk (or milk alternative)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place it cut-side down on a baking sheet lined with parchment paper.
- Bake for 30-35 minutes, or until tender and easily pierced with a fork.
- Remove from the oven and let it cool slightly before handling.
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
- Beat the eggs in a large mixing bowl.
- Add the milk, salt, and black pepper to the eggs, whisking until well combined.
- Scrape the flesh of the spaghetti squash into strands with a fork.
- Fold the squash into the egg mixture along with the cooked bacon and cheese.
- Transfer the mixture into a greased quiche dish or pie pan, spreading it evenly.
- Bake for 40-45 minutes, or until the center is set and the top is lightly golden.
- Allow to cool slightly before slicing.
- Serve warm, garnished with fresh herbs if desired.
