Description

A delightful quiche featuring crispy bacon and spaghetti squash, perfect for any meal occasion.


Ingredients

  • 1 medium spaghetti squash
  • 6 slices of bacon, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 large eggs
  • 1 cup milk (or milk alternative)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place it cut-side down on a baking sheet lined with parchment paper.
  4. Bake for 30-35 minutes, or until tender and easily pierced with a fork.
  5. Remove from the oven and let it cool slightly before handling.
  6. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
  7. Beat the eggs in a large mixing bowl.
  8. Add the milk, salt, and black pepper to the eggs, whisking until well combined.
  9. Scrape the flesh of the spaghetti squash into strands with a fork.
  10. Fold the squash into the egg mixture along with the cooked bacon and cheese.
  11. Transfer the mixture into a greased quiche dish or pie pan, spreading it evenly.
  12. Bake for 40-45 minutes, or until the center is set and the top is lightly golden.
  13. Allow to cool slightly before slicing.
  14. Serve warm, garnished with fresh herbs if desired.
