Ingredients

Scale
  • 1 pound dried navy beans
  • 1 large yellow onion, chopped
  • 1/4 cup dark molasses
  • 1/2 cup pure maple syrup
  • 1/2 cup tomato catsup
  • 1 tablespoon dry mustard
  • 1/2 pound thick-cut bacon
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Place dried beans in a large bowl.
  2. Cover them with plenty of cold water.
  3. Let them soak overnight on the counter.
  4. Drain the soaked beans.
  5. Put them in a large pot.
  6. Add fresh water and boil.
  7. Simmer for about 50 minutes.
  8. Drain the cooked beans.
  9. Save some of the cooking liquid.
  10. Put beans in a Dutch oven.
  11. Add the onions and the sauces.
  12. Stir in the molasses and syrup.
  13. Add the salt and pepper now.
  14. Lay the bacon slices on top.
  15. Cover the pot and bake at 350°F.
  16. Cook for about 240 minutes.
  17. Check the liquid levels often.

Notes

For added depth of flavor, sauté the onions until caramelized before adding to beans. Retain some cooking liquid to maintain bean consistency.
