- 1 pound dried navy beans
- 1 large yellow onion, chopped
- 1/4 cup dark molasses
- 1/2 cup pure maple syrup
- 1/2 cup tomato catsup
- 1 tablespoon dry mustard
- 1/2 pound thick-cut bacon
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
Instructions
- Place dried beans in a large bowl.
- Cover them with plenty of cold water.
- Let them soak overnight on the counter.
- Drain the soaked beans.
- Put them in a large pot.
- Add fresh water and boil.
- Simmer for about 50 minutes.
- Drain the cooked beans.
- Save some of the cooking liquid.
- Put beans in a Dutch oven.
- Add the onions and the sauces.
- Stir in the molasses and syrup.
- Add the salt and pepper now.
- Lay the bacon slices on top.
- Cover the pot and bake at 350°F.
- Cook for about 240 minutes.
- Check the liquid levels often.
Notes
For added depth of flavor, sauté the onions until caramelized before adding to beans. Retain some cooking liquid to maintain bean consistency.
