- 1 block feta cheese
- 4 eggs
- 2 tablespoons olive oil
- 1 cup cherry tomatoes
- 2 cups spinach
- Salt, to taste
- Pepper, to taste
- Fresh herbs (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place a block of feta cheese in the center of a baking dish. Surround it with cherry tomatoes and spinach.
- Drizzle olive oil over the ingredients and season with salt and pepper.
- Bake in the oven for about 20 minutes, until the feta is soft and the tomatoes are bursting.
- Remove from the oven and crack the eggs over the feta and vegetables.
- Return to the oven and bake for an additional 10-12 minutes, until the eggs are cooked to your liking.
- Garnish with fresh herbs if desired and serve immediately.
Notes
For creamier texture, opt for high-quality sheep’s milk feta. Experiment with additional vegetables for variety.
