Ingredients

  • 2 tablespoons unsalted butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Juice of 1 lime
  • Salt to taste
  • Pinch of cayenne pepper (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the husked corn ears on a baking sheet.
  3. Brush the melted butter evenly over each ear of corn.
  4. Roast in the preheated oven for 20-25 minutes, turning halfway through, until the corn is tender and slightly charred.
