Description

A comforting and delicious baked cod recipe with a crunchy Parmesan crust, perfect for family dinners.


Ingredients

  • 2 4-5 oz cod fillets
  • 2 tbsp salted butter, melted
  • 1/3 cup Panko breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • Olive oil or cooking spray
  • Salt
  • Pepper


Instructions

  1. Set the oven to 425 degrees.
  2. Add the breadcrumbs, parmesan cheese, fresh parsley, garlic powder, lemon zest, salt, and pepper to a medium mixing bowl. Combine.
  3. Place the fish fillets in a small baking dish or sheet pan.
  4. Pour the melted butter on top of the fish and evenly coat each one.
  5. Next, dip the butter-coated fillets into the breadcrumb mixture. Coat the top, bottom, and sides of the fish—gently pressing in the mixture.
  6. Place the fillets back into the baking dish.
  7. Drizzle the crusted fish with olive oil or spray a bit of cooking spray on top.
  8. Bake for 10-12 minutes.
  9. Broil on high for 2 minutes.
  10. Serve with fresh lemon wedges and enjoy!

Notes

For a gluten-free option, substitute Panko breadcrumbs with gluten-free breadcrumbs. Store leftovers in an airtight container for up to 3 days.
