A comforting and delicious baked cod recipe with a crunchy Parmesan crust, perfect for family dinners.

- 2 4-5 oz cod fillets
- 2 tbsp salted butter, melted
- 1/3 cup Panko breadcrumbs
- 1/3 cup grated parmesan cheese
- 2 tbsp chopped fresh parsley
- 1 tsp garlic powder
- 1 tsp lemon zest
- Olive oil or cooking spray
- Salt
- Pepper
Instructions
- Set the oven to 425 degrees.
- Add the breadcrumbs, parmesan cheese, fresh parsley, garlic powder, lemon zest, salt, and pepper to a medium mixing bowl. Combine.
- Place the fish fillets in a small baking dish or sheet pan.
- Pour the melted butter on top of the fish and evenly coat each one.
- Next, dip the butter-coated fillets into the breadcrumb mixture. Coat the top, bottom, and sides of the fish—gently pressing in the mixture.
- Place the fillets back into the baking dish.
- Drizzle the crusted fish with olive oil or spray a bit of cooking spray on top.
- Bake for 10-12 minutes.
- Broil on high for 2 minutes.
- Serve with fresh lemon wedges and enjoy!
Notes
For a gluten-free option, substitute Panko breadcrumbs with gluten-free breadcrumbs. Store leftovers in an airtight container for up to 3 days.
