- 2 ripe bananas, mashed
- 1 cup peanut butter
- 1 cup oats
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add the peanut butter to the mashed bananas and mix until combined.
- Stir in the brown sugar, vanilla extract, baking soda, and salt until well blended.
- Fold in the oats, ensuring they are evenly incorporated into the mixture.
- If desired, gently mix in the chocolate chips for extra sweetness.
- Scoop tablespoon-sized portions of the dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies are golden at the edges but still soft in the middle.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For chewy cookies, be careful not to overbake them.
