Description

A comforting dessert made with creamy filling, ripe bananas, and a flaky crust, perfect for family gatherings.


Ingredients

  • 1 1/2 cups heavy whipping cream
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 3 ripe bananas
  • 1 pre-baked pie crust
  • Nilla wafers (for topping)


Instructions

  1. Whisk together the milk, sugar, cornstarch, and salt in a saucepan. Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble.
  2. Whisk the egg yolks in a separate bowl. Gradually add some of the hot mixture to the egg yolks to temper them. Then return to the saucepan, stirring constantly.
  3. Stir in the vanilla extract and remove from heat.
  4. Slice the bananas and layer them in the pre-baked pie crust.
  5. Pour the pudding mixture over the bananas and smooth out the top.
  6. Refrigerate for at least 240 minutes or until set.
  7. Top with whipped cream and Nilla wafers before serving. Enjoy!

For people with diabetes, consider sugar substitutes like stevia or monk fruit.
