Description

A vibrant and delicious BBQ Tofu dish featuring crispy tofu, sweet corn, and roasted asparagus, perfect for sharing at gatherings.


Ingredients

Scale
  • 4 cups halved baby potatoes
  • 1/4 cup BBQ spice blend
  • 3-4 tablespoons high heat oil, broth, or water
  • 16 ounces super firm tofu
  • 4 ears of sweet corn, peeled and cut in half
  • 1 medium sweet onion, peeled and cut into wedges
  • 1 pound asparagus, cleaned and trimmed
  • 1/4 cup BBQ sauce
  • 1 tablespoon smoked paprika
  • 2 teaspoons organic brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon dry mustard
  • 1/2 teaspoon fresh cracked black pepper
  • 1/2 teaspoon celery salt


Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Prepare sheet pans lined with silicone mats or parchment paper.
  3. Toss cut potatoes in a bowl with oil or broth to make seasoning stick.
  4. Add half of the BBQ seasoning and coat well.
  5. Place potatoes on one side of the pan.
  6. Cube tofu and season with remaining BBQ seasoning; add to the other side of the pan.
  7. Bake for 20 minutes, then flip/stir and rotate the pan.
  8. While baking, line another sheet pan and add asparagus, onion, and corn.
  9. Drizzle veggies with oil, sprinkle with sea salt, and toss.
  10. Roast veggies for 15-20 minutes until tender.
  11. Toss the asparagus with BBQ sauce and return to the oven for 5 more minutes.
  12. Serve everything on plates or bowls and garnish with parsley if desired.

Notes

For the best texture, press the tofu before seasoning and avoid overcrowding the pan.
