- 4 medium beets
- 4 oz goat cheese or feta
- 2 cups arugula
- 1/4 cup citrus vinaigrette (made with grapefruit juice)
- 1/4 cup pistachios
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the beets, then wrap them in aluminum foil. Roast in the oven for about 45-60 minutes until tender.
- Allow beets to cool, then peel and slice them.
- In a bowl, mix arugula with a homemade citrus vinaigrette made from grapefruit juice, olive oil, salt, and pepper.
- Plate the arugula, add the sliced roasted beets, and sprinkle with goat cheese or feta and pistachios.
- Serve chilled.
Notes
For the best flavor, use fresh beets and don’t skip the roasting step. Experiment with different cheeses and add fresh herbs for extra brightness.
