Description

A vibrant salad featuring roasted beets, creamy goat cheese, and peppery arugula, complemented by a tangy citrus vinaigrette.


Ingredients

  • 4 medium beets
  • 4 oz goat cheese or feta
  • 2 cups arugula
  • 1/4 cup citrus vinaigrette (made with grapefruit juice)
  • 1/4 cup pistachios


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the beets, then wrap them in aluminum foil. Roast in the oven for about 45-60 minutes until tender.
  3. Allow beets to cool, then peel and slice them.
  4. In a bowl, mix arugula with a homemade citrus vinaigrette made from grapefruit juice, olive oil, salt, and pepper.
  5. Plate the arugula, add the sliced roasted beets, and sprinkle with goat cheese or feta and pistachios.
  6. Serve chilled.

Notes

For the best flavor, use fresh beets and don’t skip the roasting step. Experiment with different cheeses and add fresh herbs for extra brightness.
