Description

A delicious one-pan meal that combines savory bacon, tender chicken, and fresh veggies, reminiscent of the classic BLT sandwich.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 strips of bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/2 cup coconut cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and crumble when cool.
  2. Add olive oil to the same skillet and cook the chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Season with salt and pepper.
  3. Sauté minced garlic in the skillet for 1 minute.
  4. Stir in coconut cream and cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
  5. Remove from heat and stir in crumbled bacon and chopped lettuce.
  6. Serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. You can freeze cooked chicken for up to 2 months.
