Ingredients

- 4 boneless, skinless chicken breasts
- 4 strips of bacon
- 1 cup cherry tomatoes, halved
- 1 cup lettuce, chopped
- 1/2 cup coconut cream
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Cook the bacon in a skillet over medium heat until crispy. Remove and crumble when cool.
- Add olive oil to the same skillet and cook the chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Season with salt and pepper.
- Sauté minced garlic in the skillet for 1 minute.
- Stir in coconut cream and cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
- Remove from heat and stir in crumbled bacon and chopped lettuce.
- Serve warm.
Notes
Store leftovers in an airtight container for up to 3 days. You can freeze cooked chicken for up to 2 months.
