Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini, sugars, oil, eggs, and vanilla in a mixing bowl.
  3. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Consider using sugar substitutes for a diabetes-friendly version. Fresh blueberries yield the best flavor, but frozen can also work if not thawed.
