  • 4 tablespoons maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon cracked black pepper
  • 1/4 cup all-purpose flour
  • 3/4 cup water
  • 3 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 3/4 teaspoon fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • Tangzhong from above
  • 4 tablespoons unsalted butter (softened)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup light brown sugar
  • 2 teaspoons cinnamon
  • 1 cup candied bacon strips
  • 4 tablespoons unsalted butter (room temperature)
  • 2 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1/2-1 teaspoon bourbon
  • 1/2 cup candied bacon strips (for the tops)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Arrange the thick-cut bacon strips on the lined baking sheet.
  4. Mix together brown sugar, 2 tablespoons of maple syrup, bourbon, and cracked black pepper in a bowl.
  5. Brush the bacon with the maple bourbon mixture.
  6. Bake the bacon in the oven for about 20-25 minutes or until crispy, flipping halfway through.
  7. Let the bacon cool before chopping it into small pieces.
  8. Dissolve the yeast in the warm water within a bowl.
  9. Whisk in the milk, sugar, and egg into the yeast mixture.
  10. Add the Tangzhong and softened butter, mixing until well combined.
  11. Gradually add in 3 1/2 cups of flour and salt, mixing until a soft dough forms.
  12. Knead the dough on a flour-dusted surface for about 5-7 minutes until elastic and smooth.
  13. Let the dough rise in a warm place until doubled, about 1 hour.
  14. Roll out the dough into a rectangle, roughly 12×18 inches.
  15. Spread room temperature butter across the surface generously.
  16. Sprinkle the light brown sugar, cinnamon, and candied bacon evenly over the buttered surface.
  17. Tightly roll up the dough from the long side, pinching to seal the edge.
  18. Slice the rolls into 12 equal pieces and place them in a greased baking dish.
  19. Cover the pan with a cloth and let it rise again until puffed, about 30 minutes.
  20. Preheat your oven to 350°F (175°C) while the rolls are rising.
  21. Bake the rolls for about 25-30 minutes until golden brown.
  22. Allow them to cool slightly before applying the glaze.
  23. Beat together cream cheese, softened butter, powdered sugar, maple syrup, and bourbon until smooth.
  24. Spread the glaze generously over the warm rolls.
  25. Top with additional candied bacon for the final touch.

Notes

For a sugar substitute, consider using stevia or monk fruit. Avoid honey or maple syrup for sugar-free options.
