Ingredients

- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 cup vegetable broth
- 1/2 cup chopped onion
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the flour and cook for 1-2 minutes.
- Gradually whisk in the vegetable broth and milk until smooth.
- Add the broccoli florets and garlic powder, and bring to a simmer.
- Cook until the broccoli is tender, about 10-15 minutes.
- Remove from heat and stir in the shredded cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For a thicker soup, blend a portion of the soup and return it to the pot.
- Feel free to add other vegetables like carrots or cauliflower.
- Can be stored in the refrigerator for up to 3 days.
