- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/2 cup carrots, shredded
- 1/4 cup buffalo sauce
- 2 tablespoons vegan mayonnaise

- Whole grain bread or sandwich rolls
- Lettuce leaves (optional)
Instructions
- Mash the chickpeas in a bowl with a fork until chunky.
- Add celery, red onion, carrots, buffalo sauce, and vegan mayonnaise to the mashed chickpeas.
- Mix until well combined.
- Season with salt and pepper to taste.
- Spread the chickpea mixture on whole grain bread or sandwich rolls.
- Top with lettuce if desired.
- Serve immediately or pack for lunch.
Notes
Substitute regular mayonnaise for vegan if desired. Store leftover chickpea mixture in an airtight container for up to three days.
