- 1 sheet of puff pastry
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 4 ounces goat cheese, crumbled
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat.
- Add the onions and sugar, cooking until the onions are caramelized, about 20 minutes.
- Add balsamic vinegar and season with salt and pepper. Cook for another 2 minutes.
- Roll out the puff pastry on a floured surface and cut into squares. Place on a baking sheet.
- Top each square with the caramelized onion mixture and sprinkle with goat cheese.
- Bake for 15-20 minutes or until the pastry is golden.
- Garnish with fresh thyme if desired and serve warm.
