Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a bowl.
- Cream the butter, brown sugar, and granulated sugar until fluffy in another bowl.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the grated carrots and nuts if using.
- Drop tablespoon-sized amounts of the dough onto a baking sheet lined with parchment paper.
