Description

A vibrant and refreshing carrot salad packed with flavors and nutrients, perfect for any gathering.


Ingredients

  • 3 large carrots, shaved or julienned
  • 1 red bell pepper, sliced thin
  • 1 cucumber, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup citrus juice (orange or lemon)
  • 2 tablespoons miso paste
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil

Instructions

  1. Combine in a large bowl the shaved carrots, red bell pepper, cucumber, cilantro, and green onions.
  2. Whisk together in a separate bowl the citrus juice, miso paste, ginger, sesame oil, salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Serve immediately or let it sit for about 10 minutes to enhance the flavors.
