Description

A comforting and delicious dish combining roasted cauliflower with rich, melted cheese, perfect for family dinners.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheese (cheddar is classic)
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • ½ cup breadcrumbs (optional for topping)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil.
  3. Add the cauliflower florets to the boiling water and cook for 5-7 minutes, until tender but still firm.
  4. Drain the cauliflower and set it aside.
  5. Melt the butter in a saucepan over medium heat.
  6. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
  7. Slowly add the milk, continuing to whisk until the mixture thickens and bubbles.
  8. Stir in the Dijon mustard, salt, and pepper, adjusting to taste.
  9. Remove the saucepan from heat and add in the shredded cheese, mixing until melted and creamy.
  10. Combine the cooked cauliflower florets with the cheese sauce, ensuring all pieces are well-coated.
  11. Transfer the mixture to a greased baking dish.
  12. Sprinkle breadcrumbs on top, if using.
  13. Bake for 25-30 minutes, until the top is golden and bubbly.
  14. Allow to cool slightly before serving.

Notes

For a unique twist, experiment with different cheese varieties. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
