- 1 large head of cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 2 cups shredded cheese (cheddar is classic)
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- ½ cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets to the boiling water and cook for 5-7 minutes, until tender but still firm.
- Drain the cauliflower and set it aside.
- Melt the butter in a saucepan over medium heat.
- Whisk in the flour and cook for 1-2 minutes, stirring constantly.
- Slowly add the milk, continuing to whisk until the mixture thickens and bubbles.
- Stir in the Dijon mustard, salt, and pepper, adjusting to taste.
- Remove the saucepan from heat and add in the shredded cheese, mixing until melted and creamy.
- Combine the cooked cauliflower florets with the cheese sauce, ensuring all pieces are well-coated.
- Transfer the mixture to a greased baking dish.
- Sprinkle breadcrumbs on top, if using.
- Bake for 25-30 minutes, until the top is golden and bubbly.
- Allow to cool slightly before serving.
Notes
For a unique twist, experiment with different cheese varieties. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
