- 1 whole chicken
- 8 cups water
- 2 carrots, sliced
- 2 potatoes, diced
- 1 onion, quartered
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 cup corn kernels
- 2 tomatoes, chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- Bring water to a boil in a large pot and add the whole chicken.
- Reduce heat and simmer for about 30 minutes.
- Remove the chicken, let it cool, and shred the meat, discarding the bones.
- Add the carrots, potatoes, onion, and garlic to the same pot, and cook until tender.
- Include the zucchini, corn, tomatoes, and shredded chicken back into the pot.
- Simmer for an additional 10 minutes, seasoning with salt and pepper.
- Serve hot, garnished with fresh cilantro and lime wedges.
