Description

A comforting dish of soft gnocchi in a creamy sauce with chicken and sun-dried tomatoes.


Ingredients

  • 450g gnocchi
  • 500g chicken breast, diced
  • 2 cups heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup fresh basil, chopped
  • 1 cup Parmesan cheese, grated
  • 3 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through.
  2. Stir in the sun-dried tomatoes and sauté for 2-3 minutes.
  3. Pour in the heavy cream and bring it to a simmer.
  4. Add the spinach and basil, stirring until the spinach is wilted.
  5. Stir in the Parmesan cheese until melted and smooth.
  6. Meanwhile, cook the gnocchi according to package instructions, then drain.
  7. Add the cooked gnocchi to the creamy chicken and sauce, mixing gently.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with extra Parmesan if desired.
