- 4 boneless, skinless chicken breasts
- 2 large tomatoes, sliced
- 1 cup fresh mozzarella cheese, sliced
- 1 cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling (optional)
Instructions
- Preheat your grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- During the last few minutes of grilling, top each chicken breast with slices of tomato and mozzarella. Close the grill lid to melt the cheese.
- Remove from grill, and top with fresh basil leaves.
- Drizzle with balsamic glaze if desired, and serve hot.
Notes
For enhanced flavor, marinate the chicken in olive oil, garlic, and herbs. Use the freshest ingredients possible.
