- 1 1/2 tbsp extra light olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper to prevent sticking.
- Combine the ground chicken, shredded zucchini, shredded carrot, and chopped spinach in a large bowl.
- Add the paprika, onion powder, Italian seasoning, garlic powder, salt, black pepper, nutritional yeast, and cornstarch to the bowl.
- Mix everything together with your hands until well combined; you want a uniform mixture.
- Shape the mixture into small nugget-sized pieces and place them onto the prepared baking sheet.
- Drizzle the extra light olive oil over the nuggets, ensuring they are well-coated for added moisture and flavor.
- Bake in the preheated oven for about 20-25 minutes, or until the nuggets are golden brown and fully cooked through.
- Flip the nuggets halfway through for an even cook and crispiness.
- Allow the nuggets to cool for a few minutes before serving.
