  • 1 tbsp nutritional yeast
  • 1 tbsp cornstarch
  • 1 1/2 tbsp extra light olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper to prevent sticking.
  3. Combine the ground chicken, shredded zucchini, shredded carrot, and chopped spinach in a large bowl.
  4. Add the paprika, onion powder, Italian seasoning, garlic powder, salt, black pepper, nutritional yeast, and cornstarch to the bowl.
  5. Mix everything together with your hands until well combined; you want a uniform mixture.
  6. Shape the mixture into small nugget-sized pieces and place them onto the prepared baking sheet.
  7. Drizzle the extra light olive oil over the nuggets, ensuring they are well-coated for added moisture and flavor.
  8. Bake in the preheated oven for about 20-25 minutes, or until the nuggets are golden brown and fully cooked through.
