- 1 cup Italian Breadcrumbs
- ¼ cup Milk
- 1 medium Onion, very finely chopped
- 2 cloves Garlic, minced
- ¼ cup Fresh Parsley, finely chopped
- ¼ cup Sun-Dried Tomatoes, finely chopped
- 1 pound Ground Chicken
- ¾ cup Whole Milk Ricotta
- 1 large Egg
- ½ cup Freshly Grated Parmesan Cheese
- 1 tablespoon Italian Seasoning
- 1 teaspoon Salt
- 4 strips Bacon, chopped
- 4 tablespoons Butter
- 1½ cups Heavy Cream
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- 2 cups Freshly Grated Parmesan Cheese
- 5 ounces Baby Spinach
- 1 tablespoon Fresh Parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the breadcrumbs and milk in a bowl and let sit for about 5 minutes.
- Add the onion, garlic, parsley, and sun-dried tomatoes to the breadcrumb mixture.
- Mix in the ground chicken, ricotta, egg, grated Parmesan, Italian seasoning, and salt until well combined.
- Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
- Chop the bacon and cook it in a skillet over medium heat until crispy, then remove and set aside.
- Melt the butter in the same skillet over medium heat.
- Pour in the heavy cream, ½ teaspoon of salt, and ¼ teaspoon of pepper, stirring to combine.
- Bring the sauce to a gentle simmer and cook for a few minutes until slightly thickened.
- Add the Parmesan cheese to the sauce and stir until melted and smooth.
- Stir in the baby spinach and allow it to wilt.
- Bake the meatballs for about 20 minutes or until cooked through.
- Serve the meatballs hot, topped with the spinach Alfredo sauce and garnished with fresh parsley.
