Ingredients

  • 1/2 cup pecans (toasted and chopped)
  • 3 scallions, thinly sliced
  • 4 tbsp peach jam
  • 2 1/2 tbsp lemon juice (freshly squeezed)
  • 2/3 cup mayo
  • 1/4 tsp celery salt
  • 2 tbsp fresh flat-leaf parsley, finely chopped
  • Salt to taste
  • Pepper to taste
  • 12 slices bread


Instructions

  1. Prepare the chicken by finely dicing it into 1/4-inch cubes.
  2. Combine the diced chicken, dried cranberries, chopped pecans, and sliced scallions in a large bowl.
  3. Add the peach jam to the mixture, ensuring an even coating.
  4. Zest the flavor with the freshly squeezed lemon juice, followed by the mayonnaise.
  5. Stir in the celery salt, salt, pepper, and chopped parsley until well mixed.
  6. Taste the mixture and adjust seasoning if necessary.
  7. Lay out the slices of bread on a clean cutting board.
  8. Spread a generous amount of the chicken salad mixture onto half of the bread slices.
  9. Top with the remaining bread slices, pressing down gently.
  10. Cut each sandwich into quarters.
  11. Serve immediately or refrigerate until ready to serve.
