Delicious homemade Chicken Taquitos filled with tender chicken, melted cheese, and zesty taco seasoning, wrapped in crispy corn tortillas.

- 2 cups shredded cooked chicken
- 1 cup shredded cheese
- 1 teaspoon taco seasoning
- 8 small corn tortillas
- Oil for frying or cooking spray for baking
- Shredded lettuce
- Sour cream, salsa, or other desired toppings
Instructions
- Preheat your oven to 425°F (220°C) if baking.
- Combine in a bowl the shredded chicken, cheese, and taco seasoning.
- Soften the corn tortillas in a dry skillet or microwave.
- Place a spoonful of the chicken mixture onto each tortilla, roll them tightly, and secure with toothpicks if needed.
- If baking, place the taquitos on a baking sheet and spray with cooking spray. If frying, heat oil in a frying pan.
- Bake for 15-20 minutes or fry until crispy and golden brown.
- Serve with shredded lettuce and toppings.
Notes
For a lighter option, bake instead of fry. Store leftovers in an airtight container for up to 3 days.
