- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup white wine
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Creamy polenta or risotto for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken thighs with salt and pepper, then sear them in the skillet until browned on both sides. Remove and set aside.
- Add onion, carrots, and celery to the same skillet; sauté until softened.
- Stir in garlic and cook for another minute.
- Pour in the white wine and scrape the bottom of the skillet to deglaze.
- Return chicken to the skillet, add broth, thyme, and bay leaf. Bring to a simmer.
- Cover and cook on low for 90 to 120 minutes until chicken is tender.
- Serve over creamy polenta or risotto.
Notes
Use quality ingredients and don’t rush the simmer for best results. Deglazing enhances flavor.
