- 2 lbs chicken breasts
- 1 onion, sliced
- 4 cloves garlic, minced
- 2-3 tomatoes, roasted
- 1-2 chipotle peppers in adobo sauce
- 1 cup chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Tortillas for serving
Instructions
- Heat olive oil in a pot over medium heat and sauté onions until translucent.
- Add minced garlic and cook for an additional minute.
- Add the roasted tomatoes and chipotle peppers, cooking until the tomatoes are soft.
- Transfer the mixture to a blender, add chicken broth, and blend until smooth.
- In the same pot, add the blended sauce and the chicken breasts. Season with salt and pepper.
- Simmer for about 20-25 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, then return it to the pot to coat with the sauce.
- Serve on warm tortillas.
Notes
For a deeper flavor, let the sauce simmer longer before adding the chicken. Adjust spice level by modifying chipotle amounts.
