A quick and nutritious wrap combining chickpeas and a tangy Caesar dressing, perfect for busy weeknights.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 tablespoons vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce
- 2 cups chopped romaine lettuce
- 1/4 cup grated vegan Parmesan cheese
- Salt and pepper to taste
- 4 whole grain wraps or tortillas
- Optional: cherry tomatoes, for garnish
Instructions
- Mash the chickpeas with a fork or potato masher until slightly chunky.
- Stir in the vegan mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, and mix well.
- Season with salt and pepper to taste.
- Lay out the wraps and fill each with the chickpea mixture, chopped romaine, and vegan Parmesan.
- Roll the wraps tightly, slice in half if desired, and serve with cherry tomatoes on the side.
