- ¼ cup fresh lemon juice from 1 large lemon

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 batch fresh chimichurri sauce
Instructions
- Mix olive oil, lemon juice, and all spices in a bowl.
- Coat chicken thoroughly with the mixture.
- Marinate covered in the fridge for 30 minutes to 4 hours.
- Preheat oven to 425°F.
- Arrange chicken skin-up on a baking sheet with space between each piece.
- Roast for 35-40 minutes until golden and the internal temperature reaches 165°F.
- Prepare chimichurri sauce while the chicken cooks.
- Rest the chicken for 5 minutes, then serve with a generous chimichurri drizzle.
Notes
