Description

Ingredients

  • 4 bone-in skin-on chicken thighs
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice from 1 large lemon
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 batch fresh chimichurri sauce


Instructions

  1. Mix olive oil, lemon juice, and all spices in a bowl.
  2. Coat chicken thoroughly with the mixture.
  3. Marinate covered in the fridge for 30 minutes to 4 hours.
  4. Preheat oven to 425°F.
  5. Arrange chicken skin-up on a baking sheet with space between each piece.
  6. Roast for 35-40 minutes until golden and the internal temperature reaches 165°F.
  7. Prepare chimichurri sauce while the chicken cooks.
  8. Rest the chicken for 5 minutes, then serve with a generous chimichurri drizzle.

Notes

Allowing the chicken to rest after roasting will keep it juicy. Experiment with adding herbs to your chimichurri for unique flavors.
