- 1 lb fresh shrimp, peeled and deveined
- 1 cup assorted vegetables (bell peppers, zucchini, cherry tomatoes)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp lemon zest
- Salt and pepper to taste
- Fresh herbs (parsley, dill, or cilantro for garnish)
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the fresh shrimp under cold water and pat them dry with paper towels.
- Chop the assorted vegetables into bite-sized pieces and set them aside.
- Combine olive oil, minced garlic, paprika, lemon zest, salt, and pepper in a small bowl to make a marinade.
- Brush the shrimp with the marinade on both sides.
- Place the shrimp on a baking sheet lined with parchment paper.
- Arrange the chopped vegetables around the shrimp on the same baking sheet.
- Drizzle any leftover marinade over the vegetables.
- Bake in the preheated oven for about 15-20 minutes, or until the shrimp is opaque and tender.
- Remove from the oven and garnish with fresh herbs.
- Serve with lemon wedges on the side.
Notes
You can marinate the shrimp for up to 30 minutes for enhanced flavor. Experiment with different vegetables for variety.
