- 1/2 cup heavy cream
- 1/2 cup fresh raspberries
- 1 tsp vanilla extract
- Cocoa powder for dusting
Instructions
- In a saucepan, heat the heavy cream until it just begins to simmer.
- Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.
- Add the raspberries and vanilla extract, mixing gently to combine.
- Refrigerate the mixture for about 2 hours, or until firm.
- Once firm, scoop out small portions and roll them into balls.
- Roll the truffles in cocoa powder to coat.
- Store in the refrigerator until ready to serve.
Notes
- For a more intense raspberry flavor, you can puree the raspberries and strain the seeds before adding them to the chocolate mixture.
- These truffles can be stored in an airtight container in the fridge for up to a week.
