Ingredients

Scale
  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries
  • 1 tsp vanilla extract
  • Cocoa powder for dusting

Instructions

  1. In a saucepan, heat the heavy cream until it just begins to simmer.
  2. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.
  3. Add the raspberries and vanilla extract, mixing gently to combine.
  4. Refrigerate the mixture for about 2 hours, or until firm.
  5. Once firm, scoop out small portions and roll them into balls.
  6. Roll the truffles in cocoa powder to coat.
  7. Store in the refrigerator until ready to serve.

Notes

  • For a more intense raspberry flavor, you can puree the raspberries and strain the seeds before adding them to the chocolate mixture.
  • These truffles can be stored in an airtight container in the fridge for up to a week.
