- 1 baguette, sliced
- 1 cup basil leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 1/2 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon orange zest
- 4 oz goat cheese, softened
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes, until golden.
- Combine in a food processor: basil, pine nuts, Parmesan, olive oil, lemon juice, orange zest, salt, and pepper. Blend until smooth to make the pesto.
- Spread a layer of goat cheese on each toasted crostini.
- Top with a generous spoonful of citrus pesto.
- Serve immediately and enjoy!
Notes
For best results, use fresh ingredients and serve warm. Pesto can be made ahead and stored in the fridge for up to a week.
