Description

A delightful twist on classic cheesecake, blending rich cream cheese filling with crushed chocolate sandwich cookies.

Ingredients

Scale
  • 1½ cups crushed chocolate sandwich cookies (such as Oreos)
  • ¼ cup melted unsalted butter
  • 1 cup granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1½ cups heavy cream
  • 1 cup crushed chocolate sandwich cookies (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a 9-inch springform pan thoroughly with butter or non-stick spray.
  3. Combine crushed cookies and melted butter in a mixing bowl.
  4. Press the cookie mixture firmly into the bottom of the prepared pan to form a crust.
  5. Beat the cream cheese and sugar together until light and fluffy in a large mixing bowl.
  6. Add the vanilla extract and mix until well combined.
  7. Incorporate the eggs one at a time, mixing well after each addition.
  8. Pour the heavy cream into the mixture and beat until smooth.
  9. Fold in 1 cup of crushed cookies gently into the batter.
  10. Pour the cheesecake filling over the crust in the springform pan.
  11. Bake for 55-60 minutes, or until the edges are set and the center jiggles slightly.
  12. Turn off the oven and let the cheesecake sit undisturbed for 1 hour.
  13. Remove the cheesecake from the oven and cool to room temperature.
  14. Chill in the refrigerator for at least 4 hours, or overnight for the best flavors.
  15. Top with the remaining crushed cookies just before serving.

Notes

For those watching their sugar intake, use stevia or monk fruit sweetener. Room temperature ingredients are key for a smooth batter.
