Description

A refreshing Corn Orzo Salad with grilled corn, juicy tomatoes, and a creamy yogurt dressing, perfect for summer gatherings.


Ingredients

  • 1 cup orzo pasta
  • 2 ears corn, grilled and kernels removed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup scallions, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the orzo according to package directions; drain and let cool.
  2. In a large bowl, combine the cooled orzo, grilled corn, cherry tomatoes, cucumber, scallions, and dill.
  3. In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss until well combined.

Notes
