- 4 ears of sweet corn, husked
- 1 jalapeño, diced
- 2 cloves garlic, minced
- Juice of 1 lime
- 1 teaspoon Tajín seasoning
- Salt to taste
- Chopped cilantro (optional)
Instructions
- Preheat the grill or a grill pan over medium-high heat.
- Place the corn on the grill and roast, turning occasionally, until charred and golden, about 10-15 minutes.
- Let the corn cool slightly.
- Cut the kernels off the cob and place them in a bowl.
- Add the diced jalapeño, minced garlic, lime juice, Tajín, and salt. Stir until well combined.
- Optionally, add chopped cilantro for garnish.
- Serve with chips, over tacos, or alongside grilled meats or seafood.
Notes
Choose fresh, sweet corn for the best flavor. Adjust spiciness by removing jalapeño seeds.
