- 4 large russet potatoes
- 2 cups cooked chicken, shredded
- 1 packet ranch seasoning mix
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash and poke holes in the russet potatoes with a fork, then bake for about 45-60 minutes until fork-tender.
- Combine in a mixing bowl the shredded chicken, ranch seasoning, cream cheese, half of the cheddar cheese, crumbled bacon, salt, and pepper. Mix until well incorporated.
- Let the potatoes cool slightly once baked, then cut them in half lengthwise and scoop out some of the flesh to create space for the filling.
- Fill the hollowed-out potatoes with the chicken mixture, then top with the remaining cheddar cheese.
- Return the potatoes to the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
Notes
For a spicy version, consider adding jalapeños or hot sauce to the chicken mixture.
