Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped cilantro and cheese for garnish (optional)


Instructions

  1. Brown the ground beef over medium heat in a large pot until fully cooked. Drain any excess fat.
  2. Add black beans, corn, diced tomatoes, beef broth, and taco seasoning to the pot. Stir to combine and bring to a simmer.
  3. Let it cook for about 10 minutes, allowing the flavors to meld together.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Cook for an additional 5 minutes until heated through.
  6. Serve hot, garnished with chopped cilantro and cheese if desired.

Notes
