- 3-4 lbs chuck roast
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Place the chuck roast in the crockpot and season with salt, pepper, thyme, and rosemary.
- Add the chopped carrots, potatoes, onion, and garlic around the roast.
- Pour the beef broth and Worcestershire sauce over the ingredients.
- Cover and cook on low for 480-600 minutes or on high for 240-300 minutes, until the meat is tender.
- Once done, remove the roast and vegetables, and let the gravy thicken if desired before serving.
Notes
For the best results, select a well-marbled chuck roast and don’t skip seasoning. Fresh herbs can enhance the flavor significantly.
