Description

A comforting and hearty slow-cooked dish featuring tender chuck roast with fresh vegetables.


Ingredients

  • 3-4 lbs chuck roast
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary


Instructions

  1. Place the chuck roast in the crockpot and season with salt, pepper, thyme, and rosemary.
  2. Add the chopped carrots, potatoes, onion, and garlic around the roast.
  3. Pour the beef broth and Worcestershire sauce over the ingredients.
  4. Cover and cook on low for 480-600 minutes or on high for 240-300 minutes, until the meat is tender.
  5. Once done, remove the roast and vegetables, and let the gravy thicken if desired before serving.

Notes

For the best results, select a well-marbled chuck roast and don’t skip seasoning. Fresh herbs can enhance the flavor significantly.
