Description

A refreshing appetizer featuring cucumber slices topped with hummus, cherry tomatoes, and feta cheese.


Ingredients

  • 1/2 English cucumber (sliced)
  • ~1/3 cup Mediterranean hummus
  • 5 cherry tomatoes (halved)
  • 1/4 cup feta cheese (dairy-free if vegan)
  • 1-2 tbsp fresh diced parsley


Instructions

  1. Wash and dry your cucumber.
  2. Slice your cucumber into half-inch slices.
  3. Dab each cucumber slice with a paper towel to absorb extra water.
  4. Spread out your cucumber rounds on a plate and top each cucumber slice with some Mediterranean hummus (1-2 tsp).
  5. Top with half a cherry tomato, sprinkle of feta cheese, and diced parsley.
  6. Enjoy right away or store in the fridge for 1-2 hours.

Notes

These bites taste best when prepared just before serving to avoid sogginess.
