A refreshing appetizer featuring cucumber slices topped with hummus, cherry tomatoes, and feta cheese.

- 1/2 English cucumber (sliced)
- ~1/3 cup Mediterranean hummus
- 5 cherry tomatoes (halved)
- 1/4 cup feta cheese (dairy-free if vegan)
- 1-2 tbsp fresh diced parsley
Instructions
- Wash and dry your cucumber.
- Slice your cucumber into half-inch slices.
- Dab each cucumber slice with a paper towel to absorb extra water.
- Spread out your cucumber rounds on a plate and top each cucumber slice with some Mediterranean hummus (1-2 tsp).
- Top with half a cherry tomato, sprinkle of feta cheese, and diced parsley.
- Enjoy right away or store in the fridge for 1-2 hours.
Notes
These bites taste best when prepared just before serving to avoid sogginess.
