Description
A refreshing twist on the classic Caprese salad using cucumbers.
Ingredients
Scale
- 2 large cucumbers
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, cubed
- 1/4 cup fresh basil leaves
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and slice the cucumbers into thick rounds.
- In a large bowl, combine the cucumber slices, cherry tomatoes, and mozzarella cubes.
- Add the fresh basil leaves to the bowl.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper to taste.
- Toss gently to combine all ingredients.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.

- For added flavor, consider marinating the cucumbers in vinegar for 15 minutes before assembling the salad.
